Feel Enlightened Tofu Bowl

I LOVE a good stir-fry. I love them even more when they are filled with bold colors from the rainbow, like in this Feel Enlightened Tofu Bowl recipe.

Often whole foods ranging in vibrant colors come with tons of different health benefits that boost your beauty and your brain! And who doesn’t want to illuminate from the inside out?

Now, this tofu bowl isn’t your typical stir-fry recipe because it doesn’t include rice. Let me enlighten you real quick! You can make some of the tastiest stir-fry’s rice free. (Not saying I have anything against rice, I love it myself!) Sometimes it’s just so nice to fill your plate with tons of veggies and a healthy dose of protein. And if you remember from our Beauty Detox principles, you know that from a digestive and food combining perspective, it’s better to separate concentrated protein and starch. But don’t you worry Beauty, my Feel Enlightened Tofu Bowl is loaded with nutrients and ample amounts of fiber that you won’t feel anything is missing from the wholeness of this meal :).

How Cabbage Can Enlighten You

There are two varieties of cabbage, and both are absolutely wonderful for you. While you may be more familiar with the green version, let me fill you in a little bit about red cabbage. It actually has some added nutritional benefits! And, in my opinion, it has more robust hearty flavor. And I just think it’s super beautiful. This is because of the concentration of anthocyanin polyphenols that provide unique antioxidant and anti-inflammatory properties. Our bodies and our brains fight inflammation on a daily basis, so we all can use as many anti-inflammatory boosts from our veggies as possible!

Cabbage is an excellent source of vitamin C, vitamin K and manganese. It’s phytonutrients rank at the top of the list for phytonutrient antioxidants. We don’t usually think about eating cabbage to help fight against oxidative stress but hopefully, now you will. To be in an enlightened state, our bodies deserve proper protection from free radicals. Thankfully this red cabbage in my Feel Enlightened Tofu Bowl will give us plenty of protection.

Enjoying a cabbage rich meal like my Tofu Bowl recipe can even make you physically appear more enlightened! Wonder how that is? Well, cabbage can help us avoid the appearance of fine lines that creep up around our eyes. These annoying little buggers can be a sign that you may have high cortisol levels. High cortisol can cause the skin to break down faster and wrinkles to show up. And who says we need to rock wrinkles on our faces to appear wise? Um, no thank you.

How Bok Choy Can Enlighten You

Bok Choy is another delicious cruciferous vegetable that I know many people don’t often reach for when preparing a stir-fry. It’s time we change that! Bok choy is super easy to prepare and adds a tasty pepperiness to this dish. It is also so incredibly good for you!

One thing I love about bok choy that I feel many people aren’t aware of is that it actually contains omega-3s! Yes, bok choy ranks as a good source of omega-3s due to its significant amount of alpha-linolenic acid (ALA). Omega-3s play an important role in our enlightenment theme. They actually boost blood flow to our brain, which helps our cognitive performance. Our memory and other mental abilities also benefit from a healthy dose of omega-3s.

In addition, the anti-inflammatory phytonutrients in bok choy help prevent continuous and unwanted inflammation from occurring. This is because bok choy also provides us with vitamin K. I’ve actually seen bok choy listed in the top 15 vitamin K-rich foods (being an excellent source of this fat-soluble vitamin). Now you can see why I’ve included it into this recipe.
