One of my absolute favorite dishes to bring to gatherings is my Feel Festive Mexican Quinoa Bowl recipe. Not only is it super easy to put together, but also it’s loaded with healthy nutrients and delicious flavor. It is the perfect dish to share at any festivity! And it will stay good in your fridge for several days, that is if you have any leftovers to bring home. But good luck with that. This Mexican Quinoa Bowl recipe is a crowd pleaser and leftovers never seem to make it home with me :)
Why I Love Quinoa Bowls
Like the Incas, I like to refer to quinoa as the “mother of all grains”. That’s because it truly is a staple in my life! And Beauties, it certainly should be one in yours. Not only is quinoa so versatile in what you can do with it, but also it supplies one of the most nutritious forms of complex carbs in the world. While some grains just provide your body with simple carbs, quinoa will give you SOO much more!
Quinoa bowls are such a wonderful way to fill yourself with powerful, easy to digest nutrients. For example, quinoa contains all of the essential amino acids. Which means it is a complete form of plant-based protein. Often protein-rich foods are dense and difficult to digest, but not quinoa. This ancient grain actually works with your digestion instead of against it. It is rich in fiber, which helps keep your digestive tract cleansed while sparing up so much extra energy for you to enjoy the festivities!
Now, this particular quinoa bowl recipe is loaded with foods and spices that give it a bit of a Mexican flair. But the great thing with quinoa is that you can really mix it with any kind of herbs or spices and it will be delicious. I just love all the variety of quinoa bowl recipes that you can make! If you are looking for more inspiration, check out a few of my other favorites, like my Coconut Quinoa Cereal and my Orange Zest Spring Quinoa Salad.
Dressing Up Your Quinoa Bowls
You really can have fun with quinoa bowls and dress them up with any of your favorite ingredients. For this particular recipe, I paired it with some of my favorite plant-based foods, like avocado, cabbage, and orange bell pepper! But that doesn’t mean that you too have to use these exact items. You can certainly swap out the orange bell pepper for a red one if you prefer. Or even add some kale into the mix if you are low on cabbage.
What I want to emphasize to you here Beauties, is that when you make recipes I want you to have fun with it! Recipes don’t always come out exactly right. We might be missing an ingredient or forget to add one in. But no matter what, know that it will still taste good because it was made with your loving energy.
In my new book, Recipes for Your Perfectly Imperfect Life, I dive deep into this concept and explain to you how thinking this way can really help you detox your life. If you can be flexible in your cooking, and drop the super stressful “good vs. bad” labels, your body will feel lighter. You can start working easier with whatever shows up in your life, like forgetting an ingredient in your cooking! No need to feel guilty if you don’t dress up your quinoa bowl with the exact ingredients listed below. The truth is your quinoa bowl is perfect in its own imperfect way!
