This recipe is perfect by itself or with some fresh veggies like avocado, carrots, bell peppers, or cucumber. It’s creamy, herby, complex and absolutely delicious.
What is Za’atar?
Za’atar is a traditional spice blend that originates from the Middle East. It’s such an amazing combination of textures, tastes, and scents that brings a beautiful flavor to whatever you use it on!
Recipes can vary depending on the region, but traditionally za’atar contains floral spices like dried oregano, thyme, or marjoram, along with tangy sumac and nutty toasted sesame seeds. Some blends also include salt, dried orange peel, dried dill, and hyssop— also known as za’atar, the blend’s namesake spice.
How to Make Za’atar
Za’atar seasoning is widely available in most grocery stores, but it’s easy to make a similar blend if you can’t find it. You’ll probably even have most, if not all, of these spices in your pantry already.
For a similar blend, combine a tablespoon each of thyme or oregano, sumac, cumin, coriander, and toasted sesame seeds. You can also add some salt or red chili flakes to taste. Mix them all together in a small bowl and enjoy!
Baking Bread with Yogurt
Yogurt has been a popular baking staple for a long time, but did you know that yogurt is as amazing for making bread as it is for making cakes? It’s true!
Using plain yogurt or plain greek yogurt in your bread recipes can add so much flavor and complexity to your dough. The extra moisture makes your bread light and fluffy. Not only that, but the yogurt can help your dough rise better and faster, which does amazing things for the texture.
And don’t worry, Beauties— dairy-free yogurt works just as well as regular yogurt here!
Why You Should Use Dairy-Free Yogurt
Dairy-free yogurt is absolutely amazing. Not only is it a versatile ingredient, but it’s a healthy and delicious snack that can keep you feeling beautiful inside and out.
Yogurt is also a probiotic-rich food, which is super important to your gut health and digestion. Along with the right probiotic supplement and digestive enzymes, dairy-free yogurt can help your body work smoothly and keep everything in balance.
One of the best things about dairy-free yogurt is that it doesn’t come with the icky side effects that regular yogurt does. All dairy, not just yogurt, is mucus-forming which can make you feel phlegmy after you eat it. It can also wreak havoc on your skin— causing acne and breakouts.
Dairy also isn’t nearly as good for your bones as you might think. This is because it can contribute to acid imbalance within your body, causing calcium loss in your bones!
This is why you should choose dairy-free yogurt. It’s got all the amazing probiotics and health benefits that regular yogurt does, but without the unwanted ill effects.
Pita Bread vs. Flatbread: What’s the Difference?
While they’re very similar, there actually is a difference between pita bread and flatbread! There are many, many different kinds of flatbreads in cuisines around the world, from tortillas to naan to yes, pita bread! The word “flatbread” can refer to any and all of these unique recipes across many cultures— pita bread is only one of them.
So just remember: All pita bread is flatbread, but not all flatbread is pita bread.
One difference between pita bread and other flatbreads is leavening in the dough— pita bread traditionally contains substances in the dough to help it rise, while many flatbreads do not.
That being said, many flatbreads, such as naan and the one we’re making in this recipe, do also use leavening ingredients. In our recipe’s case, this is the self-rising flour and dairy-free yogurt.

- 2 cups (260 grams) self-raising flour
- 1 cup (8.8 oz) Harmless Harvest dairy-free plain yogurt
- Olive oil, as needed
- Za'atar, as needed
- Flake salt, to taste
- 1 cup (8.8 oz) Harmless Harvest dairy-free plain yogurt
- 1 Tablespoon finely chopped parsley
- 1 Tablespoon finely chopped fresh dill
- 1 Tablespoon finely chopped fresh mint
- 1 clove of garlic, minced fine or grated
- Juice of 1 lemon
- Salt and freshly ground black pepper, to taste
- Preheat the oven to 450°F. Line 2 baking sheets with parchment paper.
- Combine the flour and yogurt together in a bowl; the mixture will be clumpy. Transfer onto a clean smooth surface and knead the dough until it is smooth and can easily form a ball, about 5 minutes. The dough will become less sticky as it is kneaded, but if the dough is sticking too much to your hands, add only a sprinkle of flour at a time onto the dough and continue to knead until smooth.
- Once the dough is kneaded, divide it into 4 equal-sized pieces, and form those pieces into balls.
- Form each flatbread by rolling each ball out into a circle about ¼" thick. Drizzle oil on top of the parchment-lined baking sheet, and place the rolled out flatbread onto the baking sheet; 2 per baking sheet.
- Brush the flatbread with olive oil and sprinkle generously with za'atar and flake salt.
- Bake the flatbread for 10-12 minutes, or until puffy and golden brown. Remove from the oven, allow to cool slightly, and serve with dipping sauce.
- Whisk together the Harmless Harvest dairy-free plain yogurt, fresh herbs, garlic, lemon juice, and salt and pepper. Taste and adjust to your liking.
- Serve alongside the flatbread.
